Method
Fry bacon until till crisp and golden brown and allow to cool. Cream butter and egg yolk together with a wooden spoon, then mix in grated cheese and bacon. Add flour, season with salt and pepper and mix to a dough, adding cold water if needed. Form into a round, flatten slightly, wrap in plastic wrap and refrigerate for 30 minutes. Roll out between sheets of baking paper to 5mm thickness and cut into rounds with a 4cm round cutter, re-rolling pastry off-cuts as needed. Place on baking trays and bake at 200°C for 10-12 minutes or until light golden. Allow to cool on a wire rack and store in an airtight container.
